Free Healthy Recipe - Chilli Crab Salad

Dairy free, Low fat, Low sugar

150 grams soba noodles
340 grams crab meat, (tinned crab meat can be used)
2 Lebanese cucumbers seeded and thinly sliced
100 grams snow-pea sprouts, coarsely chopped
2 small red chillies, seeded and thinly sliced
1/3 cup lime juice
1 tbsp fish sauce
2 tsp rice syrup
2 tsp sesame oil
2 tbsp soy sauce
4 spring onions finely sliced

Boil the noodles for 3-4 minutes or until tender. Rinse under cold water and drain.
Combine the lime juice, fish sauce, rice syrup, sesame oil and soy sauce in a screw-top jar and shake well.
Combine the noodles, crab meat, cucumbers, spring onions, basil, snow-pea sprouts, chillies and Asian greens in a large bowl. Pour over dressing and toss well.
