Free Healthy Recipe - Grilled Barramundi with Rainbow Salad & Rocket Salsa

Dairy free, Low carbohydrate, Low fat, Wheat Free

This dish is very pretty and very easy. Mostly raw, the only cooking required is to grill the barramundi. It's also the perfect dish if you're trying to lose weight containing very little oil and fresh ingredients only. The rocket salsa is also lovely served over grilled chicken if you don't want to use fish. (but do try to buy organic)

Ingredients
0.125 red cabbage finely chopped
½ Spanish onion finely chopped
2 tbsp capers, rinsed, finely chopped
¼ cup kalamata olives, pitted and finely chopped
3 tomatoes deseeded and finely chopped
1 Lebanese cucumber deseeded and finely chopped
½ red capsicum finely chopped

Rocket Salsa
1 cup basil leaves, tightly packed
1 bunch rocket
½ tbsp mirin
1 tbsp lime juice
1 small red chilli
2 cloves garlic
Method

Combine the cabbage, Spanish onion, capers, olives, tomatoes, cucumbers and red capsicum together and set aside.

In a food processor blend the basil, rocket, lime juice, mirin and garlic together with olive oil until smooth and runny.
Brush the fish with olive oil and sear for 3 - 4 minutes each side.
Serve the fish on top of the rainbow salad and top with rocket salsa.

Note: If you're making this dish for just 2 people, make the same quantity of salad and take it for lunch the next day.
