Free Healthy Recipe - Zucchini & Feta Frittata

Gluten free, Low carbohydrate, Low GI, Low sugar, Wheat Free

Ingredients
2 tbsp olive oil
3 small zucchini, grated
2 tbsp fresh mint, chopped
3 tbsp fresh parsley, chopped
6 eggs lightly beaten with 2 tbsp milk or water
100 grams feta, drained and grated
Method

Preheat the oven to 180 Celcius

Heat the oil in a frying pan and add the zucchini to saute for 2 to 3 minutes. Sprinkle through the chopped mint and parsley.
Transfer to a lightly oiled ovenproof dish
Add the egg mixture and feta and season with cracked black pepper.
Place in the oven to cook through for 25 minutes

Makes 3 servings
