Free Healthy Recipe - Oysters and Herb Vinaigrette

This alternative to traditional oysters natural, Kilpatrick and mornay oysters is pretty and fresh. Oysters are known as an aphrodisiac possibly because they are such a good source of zinc - the mineral responsible in the production of healthy sperm. 6 oysters will give you 59 mg zinc - almost 5 times the recommended daily intake.

Ingredients
1 small carrot
1 stick celery
1 tbsp basil, chopped
1 tbsp chervil, chopped
1 tbsp lemon juice
Method

Finely dice the carrot, celery and capsicums and chopped herbs. Stir through the lemon juice and olive oil. Serve a spoonful of the vegetable mixture on each oyster and season with cracked black pepper.

Note: Keep opened oysters in the fridge wrapped in foil. They should be eaten the day of purchase. Unopened can be stored in the crisper section of the fridge wrapped in newspaper - use within 48 hours. Store unopened oysters in layers on the curved side to preserve their juice.
