Free Healthy Recipe - Tasty Tartlets

Dairy free, Low fat, Low GI

Typical party food is almost certainly going to assault your body. Creamy dips, cheeses and spring rolls (the deep-fried ones) are just some of the horrors that spring to mind. Not only is the food unhealthy (and horrible), it can be quite expensive. These little tartlets are easy and inexpensive. The pastry shells can be made in advance and frozen. Defrost them on the day and you cana make the fillings in less than an hour.

Ingredients
1 quantity basic pastry, (see recipe list)

Kumera Filling:
½ large kumera, peeled and cut into 5mm (1/4 inch) cubes
5 vine-ripened tomatoes cut into small cubes
1 cup fresh chervil, chopped
sea salt to taste

Leek Filling:
1 tbsp corn oil
2 leeks washed and sliced
¼ cup kalamata olives, pitted and cut into quarters
Method

Make your pastry following the recipe (see recipe list), but use a mini-muffin tin and reduce the cooking time to 10 minutes with the weights on and 5 minutes with them removed.

For the kumera filling, preheat the oven to 160 degrees Celsius.
Place the kumera and tomatoes in a lightly oiled roasting tin and sprinkle with the chervil. Season with sea salt and roast for 35 minutes. Fill half the pastry cases with the mixture.

For the leek filling, heat the oil in a large, heavy-based saucepan and saute the leeks over a low heat for 15 minutes. They will reduce considerably in volume and become very soft and sweet. Let them cool, then put a little in each of the remaining pastry cases, topping with a couple of olive quarters and a small amount of goat's cheese.

Gently heat the tartlets in a 150 degree oven for a few minutes before serving.

Makes 48 servings (serve = 1 tartlet)
