Preheat oven to 150 degrees Celsius.
Brown the lamb shanks over a high heat. Place the shanks into a large oven dish with all of the other ingredients. Cook at 150 degrees for 3 hours or more, until the lamb falls off the bone.
Thicken the sauce with kudzu.
Boil sweet potatoes until just tender and mash with butter and milk. Scoop some into a deep bowl and top with shanks. Pour over juices.
Don't forget to enjoy the marrow! If you don't like the texture, scoop it out of the shanks into the sauce and you won't even know it's there!
