Free Healthy Recipe - Beetroot Dressing

Dairy free, Low carbohydrate, Low fat

This fat free dressing is a good source of protein for vegans and anyone else wishing to increase the amount of protein in their diet.

Ingredients
1 cup beetroot, grated
½ small onion, chopped
1 tbsp rice syrup
1 clove garlic
1 tbsp lemon juice
150 grams silken tofu
Method

Blend all the ingredients together in a liquidiser. Press the dressing through a sieve and store in an airtight container. The dressing with keep for up to three days refrigerated.

Note: There is often confusion over which type of tofu to use in cooking. In the case of soy mayonnaise and other soy dressings it's always silken tofu.
