Free Healthy Recipe - Edaname

Dairy free, Gluten free, Low carbohydrate, Low fat, Wheat Free

Edaname is the Japanese name for fresh green soy beans. They are available frozen in packets. Frozen vegetables hold their nutritional value better than veggies that have been stored for too long in the fridge so don't be put off buying them. If anyone knows where to source fresh soy beans I would love to hear from them.

Ingredients
1 packet frozen edaname pods, (450g)
Method

Bring a pan of water to boil. Add the edaname and return the water to the boil. Remove from the heat, drain and rinse with cold water. Serve in their pods as a snack or peel and set aside for the recipe below.

Note: The Japanese serve edaname as a snack in much the same way as we would lay out a bowl of peanuts. They are a good source of vegetable protein and an excellent food for vegetarians.

Makes 8 servings (serve = snack size)
