Free Healthy Recipe - Beetroot Greens

Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

Most people throw the tops from the beetroot away but if they are free from insect damage and fresh they are delicious cooked the same way as you would steam silverbeet. Like silverbeet beet green contain oxalic acid - harmless once the leaves are cooked.

Method

Thoroughly wash and trim the beetroot leaves, cutting the stalks about 5cm (2in) below the leaf.

Place in a steamer and steam for 2 minutes. Remove from the heat and immediately refresh in cold water. Pat the leaves dry with a clean tea towel.
