Method
Soak vermicelli noodles in warm water for 10 minutes or until soft then drain well.
Finely chop noodles, shallots, prawns and mint and combine in a mixing bowl with fish sauce and lime juice. Soak rice paper in warm water until soft then drain and place onto a flat surface with two tablespoons of prawn mixture in the centre of each sheet. Partially roll, then top with a small amount of enoki mushroom and mint, then roll to enclose.
