Free Healthy Recipe - Bruschetta

Dairy free, Low fat, Low sugar

The quality of the bread, tomatoes and olive oil separates a good bruschetta from a not so good one. If possible use a wholegrain sourdough and always use vine ripened tomatoes (organic preferably).

3 large tomatoes, chopped
1 red onion medium, finely diced
2 cloves garlic
2 tbsp basil, fresh, shredded
2 tbsp parsley, fresh, shredded
1 tbsp olive oil
pinch salt
pinch pepper

Combine all ingredients except baguette.

Slice baguette thickly and toast. Place spoonfuls of tomato mixture on slices and serve.

Makes 5 servings (serve = 2 slices)
