Boil buckwheat noodles in salted water until cooked. Drain and rinse thoroughly. Chop coarsely.
Combine all ingredients well. Form golf ball sized patties, place patties on a plate and refrigerate until cold.
Shallow fry in olive oil until golden.
To make sauce:
Combine all ingredients and mix well.
Cooked cakes can be refrigerated and reheated in an oven.
