Free Healthy Recipe - Coriander and Coconut Chutney

Dairy free, Low sugar, Wheat Free

The poor old coconut has received a bad wrap for many decades due to its saturated fat content, but there is research and numerous books written on treating thyroid disease, slow metabolism, bowel disease, candida, and chronic fatigue with coconut oil.
When we hear snippets of information stating that a single food can be used to treat a condition, there's the danger that people will start eating it by the barrow load, yet there's no doubt in my mind that a fresh natural whole food like coconut must have some health benefits when eaten in moderation.

Ingredients
1 soft young coconut, pulp of
1cm piece ginger peeled and grated
1 clove garlic
½ lemon juiced
½ green chilli seeded and roughly chopped
2 tsp rice syrup
Method

Wash the coriander leaves and chop roughly. Add to a food processor the chilli, garlic, lemon juice, rice syrup, ginger and coconut. Process until well combined. Add the coriander and process for a further minute. Serve as an accompaniment to snapper and coriander masala.

Note: Soft young coconut is available from Asian supermarkets. To extract the pulp cut open and scoop out.
