Free Healthy Recipe - Fruit Loaf

Low fat

Recipe supplied by Hopewood.

1 cup oatbran
1 cup raisins
¼ cup currants
½ cup dried apricots, chopped
2½ cups skim milk
½ cup plain flour

Combine bran, fruits and milk. Cover and leave to stand for 1 hour.

Add sifted dry ingredients to bran mixture. Mix well and spoon into a non-stick loaf pan. Bake in a moderate oven for one hour. Turn out and leave until thoroughly cold before serving.

Makes 10 servings
