Free Healthy Recipe - Cinnamon and Oatmeal Muffins

Low fat, Low GI, Low sugar

2 tsp cinnamon
1½ cups rolled oats
1 cup buttermilk
2 tsp orange rind, finely grated
1 cup apple, freshly grated

Preheat oven to 190 degrees Celsius.

Sift flour, baking powder and cinnamon. Add rolled oats and mix through. Beat egg whites, add milk, apple juice concentrate, rind and vanilla. Mix well. Add to flour and fold through.
Add grated apple and mix well.
Lightly grease muffin tins and sprinkle with bran. Shake off excess.
Spoon mixture into lightly greased muffin tins.
Bake for 20 - 25 minutes until cooked through.
