Free Healthy Recipe - Prune Bars

Dairy free, Low fat, Low GI, Low sugar

These delicious prune bars are so easy to make - just throw it all in the food processor, chill in the fridge and you've got handy little snacks to take to work or school.

Ingredients
2/3 cup prunes, finely chopped
1/3 cup dried apple, finely chopped
1 tbsp sesame seeds, toasted
½ cup raw bran
2 tsp lemon rind, finely grated
Method

Combine the first 7 ingredients in a food processor. Turn on. Quickly add vanilla and orange juice to bind, then lemon rind.

Line a 30cm x 20cm slice tin with foil and press mixture into it. Refrigerate for at least 4 hours. Cut into bars. Keep in an airtight container.

Sprinkle with dessicated coconut for a more indulgent treat.

Makes 12 servings
