Free Healthy Recipe - Green Summer Salad

Dairy free, Gluten free, Low carbohydrate, Low fat, Low sugar, Wheat Free

A fresh and simple salad perfect for those hot summer days!

Ingredients
500 grams snow peas
½ bunch watercress
Method

Wash the lettuce and watercress. Remove the thick stems, break the leaves into small pieces and place in a salad bowl.
Slice the snow peas into thin strips and add to salad greens.
Slice the carrots and zucchini into matchsticks. Par boil carrots and zucchini for 30 seconds. Plunge into cold water to stop the cooking process. Drain and add to salad greens.
Toss with Miso dressing (see recipe list) just before serving.

Makes 4 servings (serve = with dressing)
