Free Healthy Recipe - Asian-Style Spiced Chicken & Noodle Broth

Asian chicken and noodle broth is a hearty meal in its own right. And cooked in the slow cooker, the flavour of the stock intensifies while the chicken cooks. Then finally just before you are ready to serve, in go the noodles and green veggies creating a fresh and wholesome meal that is low in fat, rich in protein and bursting with nutrients.

1 large ginger, peeled knob
1 cinnamon quill
1 tsp allspice, berries
1 tsp chillies - dried, flakes
¼ cup sugar, raw
100 ml tamari
1 tbsp lemon, juice
1 litre water
1 lemon finely sliced
1 chicken - free range skin and excess fat removed
1 rice noodles large, bunch
6 cups asian greens, washed & chopped

Place all the spices in the slow cooker pan with the sugar, soy sauce, lemon juice and water.
Secure lemon slices over the chicken with tooth picks and place in the pan.
Cover and set the machine to low to cook for 6 hours.
Remove the chicken from the pan.
Strain the chicken broth then return it to the pan with the noodles and Asia greens. Cover the pan to allow the noodles to soften and the veggies to wilt. Slice chicken and serve in large bowls with the noodles, veggies and spicy broth.
