Free Healthy Recipe - Cherry Bruschetta

Low fat, Low GI

What a wonderful variation of traditional bruschetta. Recipe courtesy of Aussie cherries.

2 slices bread - sour dough, toasted
1 tbsp olive oil
½ cup fresh cherries, pitted, coarsely chopped
2 tbsp onion - red, finely chopped
2 tbsp limes, juiced
¼ cups mozzarella, reduced fat, grated

Preheat the grill to a medium heat.

Brush toast with olive oil.
Combine cherries, onions, lime juice and remaining olive oil; mix well.
Top each slice of toast with tablespoon of cherry mixture.
Sprinkle mozzarella and grill until cheese melts.
Serve immediately.
