Free Healthy Recipe - Lentil Rice

Dairy free, Low fat, Low sugar, Wheat Free

Ingredients
2 tbsp olive oil
2 large onions, sliced thinly
3½ cups hot water
pinch sea salt
¼ tsp black pepper
¼ tsp cloves
¼ tsp cardamom
¼ tsp cinnamon
¼ tsp nutmeg
Method

In a medium sized saucepan heat oil and fry onion over medium heat until golden brown. Add lentils and rice to the pan. Fry, stirring for 2 minutes. Add hot water, salt and spices. Stir through and bring to a boil quickly. Turn heat down and cook for 45 minutes, or until water has been absorbed. Serve with Pumpkin Curry if desired.
