Free Healthy Recipe - Cracked sweet and sour freekeh

Dairy free, Low fat, Low GI, Low sugar

This well flavoured dish combines a few nutritional superheros. Freekeh and parsley, rich in iron, prunes increasing the fibre content, and the preserved lemon just make it taste great.

8 pitted prunes finely chopped
2 preserved lemons finely chopped
1 cup continental parsley, finely chopped
1 pinch sea salt

Chop all ingredients.

Cook the freekeh as per instructions. While still warm, combine the ingredients together and serve.
Delicious with Italian baked capsicum and Spicy herb baked monkfish (see recipe section).
