Combine lemon rind, lemon juice, olive oil, parsley, tarragon and sugar in a jug. Season with salt and pepper. Pour over Ingham Turkey steaks. Cover with plastic wrap and refrigerate. Set aside to marinate for 30 minutes. Cook for 3 to 4 minutes on each side, in a non-stick pan, char-grill or on a barbecue hot plate. Serve with salad.
