Pre heat the oven to 180C
Mix the oats, cherries and pepitas together in a bowl.
In another small bowl combine the tahini and maple syrup and stir until smooth. ( a fork seems to work best )
Comine the two.
Line a baking sheet with baking paper and drop spoonfuls of the mixture into the tray - there's no need to be too neat here - the rustic look is good.
Place in the oven to bake for 15 - 20 minutes ir until golden.
Allow to cool then store in an airtight container.
