Free Healthy Recipe - Seafood & Corn Chowder

Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

This seafood chowder is absolutely delicious, suprisingly hearty and is so easy to make.

2 tsp olive oil
½ onion peeled and finely chopped
1 stick celery, finely chopped
2 medium potatoes, peeled diced
2 cups fish stock
420 grams Edgell Corn Kernels, No Added Salt, undrained
200 grams prawns, unpeeled
150 grams smoked fish, chopped
1 tbsp dill, chopped

Cut the vegetables as suggested.

Heat the oil in a saucepan, and add onion, celery and potatoes and cook stirring for 5 minutes.
Add the stock and cook for a further 5 minutes , and then add the undrained Edgell Sweet Corn, cover and cook for a further 5 minutes.
Stir in cream cheese, prawns and smoked fish and cook covered for a further 5 minutes or until tender and the cream cheese has completely combined.
Add the dill and season with plenty of cracked black pepper.
