Heat the milk and the vanilla pod in a small saucepan until hot (but not boiling). Remove the vanilla pod and put to one side. In a bowl, whisk the eggs and sugar and then slowly whisk in the hot milk. Pour mixture into 4 ramekins until 3/4 full. Grate a little nutmeg over the top of each ramekin.
Place ramekins in a baking tray and half fill with hot water. Bake until custard is set (approx 30-35 minutes). When custards have cooled a little, serve with fresh or stewed fruits.
