Free Healthy Recipe - Balsamic Roast Mushrooms

Dairy free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

This dish is an excellent accompaniment to roast or grilled meat and chicken.

Ingredients
1 clove garlic
1 red chilli cleaned and deseeded
600 grams button mushrooms
2 tbsp parsley, chopped
1 pinch sea salt
1 tbsp rice syrup
2 tbsp thyme, chopped
2 tbsp tarragon, chopped
Method

Preheat oven to 220ºC.

Combine the olive oil, balsamic vinegar, garlic, chilli, rice syrup and salt and pepper in a screw-top jar, shake well to combine.
Place mushrooms into a large bowl and pour over the vinegar mixture. Toss well to combine.
Spoon the mushrooms and marinade into a greased baking dish and roast for 20-25 minutes, tossing twice during cooking, or until tender. Sprinkle with herbs and serve.
