Soak the chia seeds in water and set aside for 10 minutes until they form a jelly like consistency.
Combine the oats, dates, sultanas, almonds, cocoa and vanilla essence in a food processor until the mixture resembles fine breadcrumbs. Add the chia seeds and process for a further minute until well combined.
Using your hands mould the mixture into balls.
Refrigerate for 30 minutes before serving.
