Free Healthy Recipe - Toddlers Cheesy Meatloaf

Gluten free, Low carbohydrate, Low GI, Low sugar, Wheat Free

This protein packed meal is super easy to prepare. Full of vegetables too for extra nutrients. Kids just love the warm gooey cheese. A great meal for the whole family to enjoy.

400 grams lean beef mince
400 grams lean pork mince
½ onion finely chopped
1 clove garlic crushed
1 cup carrot, coarsely grated
2 tablespoons continental parsley leaves, finely chopped
1½ cups mozzarella cheese, coarsely grated
1 egg
2 tablespoons fruit chutney or barbeque sauce

Preheat oven to 180C.

Mix all the ingredients in a large bowl with your hand. Once mixed, fill a 23 x 12.5cm loaf tin and bake for approximately 1 hours. Cool in tin for 20 minutes before turning out onto a plate, cutting and serving. Serve with any cooked grain and vegetables or on a bread roll with salad

Store in the fridge for 3-4 days or freeze for up to one month.

Note: Rice crumbs are available from the health food section of the supermarket. They are a good gluten-free option.
