Free Healthy Recipe - Persimmon, Fig and Sour Cherry Compote

This compote is delicious served with pancakes and yoghurt for breakfast or an accompaniment to soft goats cheese with biscuits.

Ingredients
1 cup water
1 tsp honey
2 tbsp rosewater
2 tbsp lemon juice
3 pieces orange rind, approx 10cm long
1 cinnamon quill
1 tsp allspice
½ cup wild figs
½ cup persimmons
½ cup sour cherries
Method

Combine the water, honey, rosewater, and lemon juice, orange rind and spice together in a pan and gently bring the ingredients to the boil.

Add the figs, persimmons and sour cherries to the pan and reduce to simmer. Cover and cook slowly for 30 minutes. Allow to cool and store in an airtight container in the fridge.
