Mix together the pork, shallots, red curry paste, and coriander. Using your hands divide the mixture into 8 balls and work each each down the length of the skewer.
Heat BBQ/Grill (or pan) until hot. Brush pork with a little oil, cook for about 8 minutes or until cooked through.
Heat the sauce ingredients in a small pan over a medium heat for around 10 minutes stirring regularly.
Serve the sauce over the pork kebabs and serve with Asian greens and brown rice.
