Free Healthy Recipe - Thai-style Pork Kebabs with Peanut Sauce and Asian Greens

Thai style pork kebabs with peanut sauce and Asian greens uses lean pork mince and variety of Asian ingredients to make a meal complete with protein, antioxidants, and numerous vitamins and minerals including B group vitamins, selenium, zinc, and omega-3 fats.

Ingredients
500 grams pork mince
2 shallots finely chopped
2 tbsp Thai red curry paste, to taste
½ cup fresh coriander, chopped
8 kebab skewers soaked in water

Peanut sauce:
2 cloves garlic, crushed
1 tbsp tamari, sodium reduced
1 small red chilli, finely chopped and deseeded
1 lime juiced
Method

Mix together the pork, shallots, red curry paste, and coriander. Using your hands divide the mixture into 8 balls and work each each down the length of the skewer.

Heat BBQ/grill (or pan) until hot. Brush pork with a little oil, cook for about 8 to 10 minutes or until cooked through.
Heat the sauce ingredients in a small pan over a medium heat for around 10 minutes stirring regularly.
Serve the sauce over the pork kebabs and serve with Asian greens and brown rice.
