Free Healthy Recipe - Stir Fried Pork with Shitake and Buckwheat Noodles

Lean pork lends itself brilliantly to Asian cooking, in fact the Asians eat more pork than any other nation in the world.
Stir-fry pork with shiitake and buckwheat noodles steals its ingredients from China and Japan to make a delicious and easy meal the whole family will definitely enjoy.
From a health perspective it's a winning combination too. Protein, Omega 3 fats, the powerful antioxidant selenium and a range of B group vitamins are found in the pork not forgetting the wonderful immune-strengthening properties of the shitake mushrooms.

Ingredients
500 grams lean pork, cut into strips
2 tbsp sesame oil
2 tsp ginger, grated
1 red capsicum sliced
100 grams shiitake mushrooms, sliced
2 tbsp tamari, sodium reduced
2 tbsp organic hoisin sauce
2 tbsp mirin
6 green shallots sliced
Method

Heat 1 tbsp of sesame oil in a large wok over medium-high heat and cook the pork in batches for 1 - 2 minutes, stirring continuously. Transfer to a plate and cover loosely with foil and set aside.

Place noodles into a pan of boiling water and cook for three minutes. Drain and leave to soak in cold water to prevent the noodles sticking together.
Reduce heat to medium add 1 tbsp sesame oil to wok and cook ginger, capsicum and mushrooms for 1 minute. Drain the noodle and add them to the pan with the tamari, hoisin, mirin, shallots, coriander and cook for 2-3 minutes, stirring continuously. Add the pork and bok choy and cook for 2 minutes or until leaves just wilt.
