Free Healthy Recipe - Egg and Mushroom Florentine

Ready in 15 minutes, this is the perfect breakfast recipe or even a light dinner, served with some green salad and extra vegies or brown rice.

Ingredients
2 large field mushrooms, approx 200g each
1 tbsp olive oil
2 eggs
½ bunch English spinach, washed and trimmed
2 tbsp parmesan
Method

Heat a BBQ or grill pan.
Peel or brush the mushrooms and carefully remove the stalks.

Brush each side of the mushroom with olive oil and place them onto the grill pan for a couple of minutes.
Crack an egg into each mushroom; cover the BBQ or place a cover over the grill pan and leave to cook for between 5 - 8 minutes depending on the size of the mushroom..
While the eggs are cooking, wilt the English spinach in a pan
Serve the eggs on a bed of spinach with grated Parmesan and cracked black pepper.
