Free Healthy Recipe - Freekeh Salad

Dairy free, Low sugar

Ingredients
2 cups whole grain freekeh, cooked
1 cup red capsicum, roasted and cut into strips
1 cup eggplant, grilled and chopped
2 bunches fresh coriander, roughly chopped
1 cup dried apricots, chopped
1 small red onion, finely sliced
3 lemons juice only
½ cup olive oil
1 tbsp honey
1 tsp sea salt
Method

Prepare all vegetables in advance.

Mix the lemon, oil and honey with seasoning until well combined. Toss all the dry ingredients together and coat lightly with the dressing.
Serve as a side dish. Delicious with grilled lamb.
