Free Healthy Recipe - Orange Muffins

These muffins are a much healthier option than many commercial ones. Made with Omega spread they contain no hydrogenated or trans fats and no saturated fat from butter.

Method

Preheat the oven to 200C and grease the muffin pan.

Cut the unpeeled orange into quarters and add them to a food processor with the sugar and vanilla. Process until the orange is finely chopped. In a large bowl, whisk the egg, omega spread and stir together. Add the orange mix and orange juice. Sift the flour into the wet mixture and combine the ingredients gently.
Spoon the mixture into the muffin tray and bake in the oven for 15 - 20 minutes until golden brown.
