Free Healthy Recipe - Lychee and Goat's Cheese Bites

Gluten free, Low carbohydrate, Low fat, Wheat Free

These simple little cocktail bites are great for summer entertaining.

15 lychees peeled
30 walnut halves dry roasted

Peel the lychees and using a small knife prise the seed away from the fruit.

Cut each lychee in half and fill with a small amount of goat's cheese. Top each with a walnut half and store in the refrigerator until you are ready to serve.

Makes 30 servings (serve = one "bite")
