Oyster mushrooms are available in brown, grey, pink and yellow. They are very delicate and softer in texture than the common white or swiss brown.

To Buy:
One of the exotic cultured mushrooms - available from good greengrocers. Usually sold on flat trays covered in plastic. Look for fresh mushooms and avoid any that are withered or discoloured.
To Store:
Remove any plastic and store on a flat tray covered with very slightly damp kitchen paper. Store for up to 5 days.
Tips & Tricks:
Do not eat raw oyster mushrooms - they can cause an allergic reaction.
Cooking Tips:
These delicate mushrooms need very little cooking. Mainly used in light creamy sauces, risottos and omelettes.
