Pomegranate molasses is made with pomegranate juice and sugar. Using the arils only (and not the pith) it's sticky sweet with no trace of bitterness. Some commercial brands are bitter , an indication that care was not taken to remove the pith. You can make your own. I found a recipe by blogger
