Trout
There are several varieties of trout, such as Rainbow trout or Arctic Char. Steelhead trout are anadromous, meaning they spend part of their lives in fresh water, and part in salt water. It is a popular sport fish, with a mild sweet flesh ranging in colour from pink to white depending on whether it has been farmed or not.
Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
When trout is fresh, it shouldn't smell fishy. The eyes should be bright and clear, the gills should be reddish, and the skin covered with clear, slippery slime. The flesh will spring back when pressed with a finger.
To Store:
Rinse well and pat dry. Will keep for two days in the fridge if wrapped well, and up to two months in the freezer.
