Buy porcini mushrooms from good delicatessens and ingredient retailers. Look for large pieces without too much sediment of broken pieces and dusty crumbs.
To Store:
Store in an airtight container, away from humidity and heat.
Tips & Tricks:
Soak porcini mushroom pieces in warm water for about 30 minutes before using, to reconstitute. The soaking water can be retained to use as stock.
