Kenchur (Kencur)
This is a member of the same family as galangal and ginger, with a gentler fragrance and flavour. It is used mostly in Thai and Malaysian stir-fries and curries.

Tips & Tricks:
Add kenchur powder to Asian curries and stir-fries for an authentic flavour. If you can't find kenchur, use 2/3 of the amount of galangal powder.
