Chickory (Belgian endive)
The Americans call this pale, yellow, torpedo-shaped lettuce 'endive'. The leaves are tightly packed - pale yellow or white in colour. More robust in texture that other salad greens, chickory is slightly bitter in taste, but crisp in texture.
Avoid wilted, soft, discoloured edges. Look for smooth, white leaves that are crisp in texture.
Will store in the crisper section of the fridge in plastic bags for up to 6 days.
