Warehou
Silver or blue warehou average 2kg in weight and approximately 55cm in length. Except for their colour they are similar in appearance. Blue warehou is blue-green above and silvery white below and silver warehou is blue-grey above, silvery below and covered with spots.

Other names include black trevally, sea bream, spotted trevally, spotted nose trevally.

Note about amines: Fresh seafood has low amine levels, but when older than two days the amine content rises to moderate, and any fish that has been frozen has high levels.

To Buy:
A budget fish, usually available as fillets. Fillets should be firm, with creamy white flesh, no brown markings and have a pleasant, fresh sea smell.
To Store:
Wrap fillets in plastic wrap on a plate for up to 3 days refrigerated or freeze for up to 3 months.
Tips & Tricks:
Remove the tough skin from the fillets before cooking.
Cooking Tips:
A slightly dry fish, warehou works well baked and BBQ'd in foil, or added to curries and casseroles.
