Free Healthy Recipe - Ceviche
Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Wheat Free
Ceviche is fish cooked in lemon juice and spices with no heat applied. It has a clean fresh taste and makes a perfect start to the New Year. And the beauty of making it the day before is it tastes much better than on the day of making.
500 grams blue eye trevalla
1 cup lemon juice
1 tsp sea salt
1 red onion chopped
2 medium tomatoes, peeled, seeded and chopped
1 green capsicum finely chopped
1 Lebanese cucumbers peeled, seeded and finely chopped
¼ cup continental parsley
1 tbsp oregano, finely chopped
¼ tsp ground cloves
1 red chilli finely chopped
Cut the fish into small pieces approx 5 cm long. Marinate in the lemon juice and salt for 3 hours or overnight.
Combine the vegetables and herbs and spices. Drain the fish and serve with the other ingredients.
Note: 1 gram of cloves contains more antioxidants than 75g broccoli and 150g orange.
