This recipe, courtesy of my friends from Cobram Estate, might not exactly be health food but it's one of these meals we all love to enjoy as a special treat. It's the perfect meal to serve on the weekend when friends come over to lunch, when there's time in the day to burn off all those delicious comfort carbs!. Buy spelt/wholemeal pasta if you want to health it up a bit and always serve it with an accompanying salad.
Ingredients
240 gram pasta, spelt preferably
150 ml extra virgin olive oil (see olive oil), Cobram Estate First Harvest
5 cloves garlic
2 red chillies finely chopped
2 zucchini coarsely grated
500 grams prawns, roughly chopped
1 bunch flat leaf parsley, chopped
1 pinch sea salt
1 pinch cracked black pepper

![]() Method In a large pot of boiling water, add salt and spaghettini and cook until al dente. Serve immediately with an accompanying fresh salad. Makes 4 servings |
