This beautiful entree is much easier to make than it looks and is surprisingly low in KJ.
With pumpkin and spinach it adds to your share of daily antioxidants not forgetting (how could we forget this) that it tastes great!
Ingredients
300 grams English spinach, washed and trimmed
6 egg whites
3 shallots finely chopped
300 grams pumpkin, Cut into smll chunks
80 grams reduced fat cream cheese
½ lemon juiced
150 grams smoked salmon
5 grams black pepper
