Food Description:

A leavening agent used in baking, also referred to as sodium bicarbonate and is four times as strong as baking powder. Baking soda is used in recipes that have acidic ingredients such as vinegar or citric acids as its alkali nature blances out pH levels.

Tips and Tricks: As baking soda starts to react with ingredients as soon as it is added, be sure to bake batter straight away. Baking soda causes cocoa powder to turn red during baking when they are combined in a recipe, which is why the term Devil's Food Cake is used.

Amines: Amines come the breakdown or fermentation of proteins. High amounts are found in cheese, chocolate, wine, beer and yeast extracts. Smaller amounts are present in some fruits and vegetables such as tomatoes, avocados, bananas.
