Food Description:

Also called Loomi or Oman Lemons, these whole, dried limes have a wonderful citrus flavour with a richly fermented overtone. The inside dried flesh is black although the outer skin is actually tan or brownish-yellow.

General Information:

To Buy: Buy whole black limes from a specialty spice shop or Middle Eastern store.
To Store: Store away from humidity and light. Black limes should keep for at least 15 months from date of purchase.
Tips and Tricks: Pierce whole limes with a skewer and add to chicken or fish casseroles. Grind the limes to make loomi powder, which can be added to Middle Eastern rice and meat dishes for a limey flavour.

Amines: Amines come the breakdown or fermentation of proteins. High amounts are found in cheese, chocolate, wine, beer and yeast extracts. Smaller amounts are present in some fruits and vegetables such as tomatoes, avocados, bananas.
