The desiree is a waxy potato that's long oval in shape, with pink skin and yellow flesh.

Note: when peeled, the level of salicylates drops to safe/negligible amounts.

To Buy: Avoid spongy, wrinkled or green-coloured potatoes.
To Store: Store for weeks in a paper bag with plenty of ventilation. Never store potatoes in plastic bags.
Tips and Tricks: Be gentle with potatoes as they bruise if mistreated.
