This is another very simple yet delicious salad combining the finest tasting tomatoes with small quantities of buffalo mozzarella. Served with a great quality grain sourdough it makes a delicious light and very simple lunch.

Ingredients
4 large vine ripened tomatoes, sliced
350 grams buffalo mozarella, sliced
½ cup fresh basil leaves, (small leaves are best)
extra virgin olive oil
cracked black pepper

Method Arrange the slices of tomato and mozzarella on a platter. Tear the basil leaves over the top and drizzle over the the olive oil and black pepper. Makes 4 servings |
